It's a nice way to use up some of the abundant front yard rhubarb. Luckily, apples were on sale when figuring out how to make use of the rhubarb.
Fruit layer
- 320 gm (approximately 3 C) Rhubarb, cut into 1/2" cubes
- 390 gm (approximately 4 small Galas) Apple, peeled, cored and cut into 1/2" cubes
- 2 T fresh Lemon juice
- 1/2 C sugar, poured over the fruit placed in the 11 X 7" buttered pyrex dish.
Topping
- 1/2 C Flour
- 3/4 C Quick cooking oats
- 1/2 C packed brown sugar
- 6 T cold Butter cut into smaller pieces
- 1 tsp Cinnamon
- Put it all in food processor and pulsed until it came to a course sand consistency
Cook
- 45 minutes at 350 degrees (F)
