Coq au Vin

When the local grocery store is selling chicken thighs for $0.97/lb, it's time for Coq au Vin. Julia Childs is famous for this, but we prefer the NY Times version, with some modifications. Don't use the brandy and don't mess with the toast bit.  Not needed. Most expensive component can be the vin. It has to be tasty on it's own. Fortunately, Barefoot Cabernet or Pinot Noir works great and comes in at a little less than $6/bottle, which is good cuz it uses essentially the whole bottle. Worth it.

Chicken Tinga Tacos

The most thorough investigation of this dish seen is on Serious Eats. But, basically, a salsa is made with chipotle peppers and a little adobo and the chicken is slow cooked until it shreds easily. Including tomatillos and fish sauce? Maybe not. In a pinch, Kirkland Salsa is used for the "salsa" and chipotle powder, oregano, garlic powder, cumin and salt added to the sauted onions and whatever else is included.

Barbeque Chicken Pizza

Yes.  The abomination. Old timer pizza makers are turning in their graves.  Don't care.  It's delicious. So there.

Crust:

  •  make the baguette dough recipe, including dividing the initial rising in half. Each half makes one pizza dough.

Lemon Pepper Chicken

From Delish. The best lemon pepper seasoning is Newman's. Significantly better than the others tried. Prefer to slice the breasts thin and maybe even pound them a bit to get them a uniform width to help cook evenly. Another good recipe to handle those problematic chicken breasts that like to turn dry when cooked. Nice that this comes together quickly.

Yogurt Chicken

Great recipe from Cooking Classy. The ginger and cilantro give it a kind of Indian vibe without the usual curry heat. Almost always use chicken breast and cut it into pieces to get more of that yogurt-spice coating. Then skewer and either grill or cook in the oven at 425 F. Goes really well with rice. The yogurt marinade tenderizes the chicken nicely. We make our own Greek Yogurt from 2% milk instead of whole milk. Doesn't seem to detract from the recipe.

Chicken Marsala

This one was found on SeriousEats.com  Looking for yet another chicken recipe to add variety to chicken recipes since chicken is usually one of the cheapest options available.  We liked it a lot.  Toughest part was finding the Marsala wine for this.  Got Taylor Marsala at Safeway.  About $9/bottle.  Not that expensive, but not cheap.  Could probably get two full recipes/bottle.  Marsala wine tasted like cream sherry to both of us.  Expect cream sherry could easily substitute for the Marsala.
