Needed a Beef Pho recipe that didn't include Thai Basil since there wasn't any at the grocery store. Once Upon a Chef had one that looked promising. A favorite thing to do with left over roast beef is to slice it thin and slip it into Pho right before serving and let the broth heat it up.
We like to load Pho up with a lot of extra veggies like thinly sliced celery, carrots, radishes, cabbage, green onions, cilantro, mushrooms, etc. With all those additions, the broth comes out a bit thin. Added some Better Than Broth, 5 spice powder, more ginger and a little vinegar. Really nice. Still would like some Thai Basil, but if not available, this was great.
