Fruit leathers are another solution for what to do with that bulk fruit purchase that was drug home. They make even more sense for consuming home grown produce, since it's very easy for a couple dollars worth of store purchased fruit to go into making a single leather/rollup!
The Recipe is from the Magic Mill Dehydrator manual. Recommends 800 g/leather. Typically go for 2 C of puree. That seems to work well.
To make life easier, bought silicone trays to make these. The dehydrator comes with hard plastic trays that really stick to the dried leathers, even when an oil layer is first sprayed on the tray. As long as the leather is dry, it doesn't stick to the silicone. Nice.
The 158 F setting should pasteurize the product to enhance the safety of the resulting leather. Precooking should also help. We don't wrap with parchment. Usually wrap in plastic wrap and store in a Mason jar.
