Addictive recipe from Cookie and Kate that includes a lot of eggplant and Mediterranean flavors. Sort of like Ratatouille, but with eggplant instead of zucchini. The Mrs likes it much better than Ratatouille, but she's partial to eggplant. Might even think of it as chunky Mediterranean salsa equivalent. Maybe.
A bit of work, but worth it. Versatile uses. Can be used as topping for crunchy toasted bread or as a topping for pasta, etc. Also seen it used as a standalone side dish. Particularly enjoyed when topping whole wheat spaghetti noodles that were seasoned with a bit of pepper and Parmesan cheese. Even better if a thin slice of pan fried chicken breast is slid in between. Give the chicken slices a sprinkling of salt, pepper, Italian seasonings and a light dusting of flour before frying. Good enough to be a dish served to company.
