Basic recipe came from Bon Appetite. But we had some rhubarb and frozen mango, so those went in, too. total fruit weight was 2 lbs, as per the recipe. Didn't like the idea of coming across a whole clove in the final product, so that was ground up. Red pepper toned down as one of us can't handle heat. Used cosmic crisp apples, not Grannys.
As written, too similar to apple pie filling to be happy with. Added a tsp of garam marsala to impart more Indian flavor. That helped a lot. To be fair, originally intended to be an accompaniment to a pork entree. Not how we tend to use it. Does the trick when chutney is called for and there are cheap apples available in the stores. Also takes in some of that rhubarb, too.
