From Delish. Cabbage is readily available and usually cheap. Makes a great soup. Usually substitute more Italian-type herbs for the chili powder. Sometimes caraway seeds. Whatever. Good choice when there are leftover beans that need something to do.
Other recipes out there throw in green beans, bell peppers, etc and use plain diced tomatoes and not fire roasted. It all seems to work. Satisfying on cold winter nights. Topping with some herbed croutons and/or some grated cheese wouldn't be a bad idea, either. It's vegetarian if vegetable broth is used for the base. Gluten free if the croutons aren't added.
