This one was found on SeriousEats.com Looking for yet another chicken recipe to add variety to chicken recipes since chicken is usually one of the cheapest options available. We liked it a lot. Toughest part was finding the Marsala wine for this. Got Taylor Marsala at Safeway. About $9/bottle. Not that expensive, but not cheap. Could probably get two full recipes/bottle. Marsala wine tasted like cream sherry to both of us. Expect cream sherry could easily substitute for the Marsala. I seem to recall other versions seen online that claim just that.
Mostly followed the recipe, except didn't add the butter or the soy sauce. Neither was needed. Gelatin didn't seem to do much. Probably can simply reduce to the sauce to the desired consistency and skip the gelatin. Browned the cutlets for about 3-4 minutes per side. Final chicken cutlets were tender and not dry, which is what is looked for with chicken breast recipes.
Served over mashed potatoes with a green salad. Great meal.
